yum install openoffice.org-base openoffice.org-core openoffice-calc openoffice-write --exclude=openoffice.org-langpack-*
yum install openoffice.org-langpack-<your_language_if_not_en_US>

or your installation will be incomplete.

I would just "yum install openoffice.org-core"

that and a few depenacies only uses about 300mb
