I'm sorry, but I don't think there is a very "user friendly" way to do what you want other than using different SSIDs. OTOH, a clever SSID for the 5GHz band is a good piece of social engineering to get those with appropriate hardware to use the alternate band even if they don't understand enough to know why their "giga" hurts...
