The available desktops are, in alphabetical order:
GNOME, KDE 4, LXDE and XFCE
Plus some lightweight window managers without a full desktop environment
attached.

You can add them through the Add/Remove Software tool, which is
PackageKit-gnome or KPackageKit depending on what desktop you're using, or
you can use command-line yum:
su -c "yum groupinstall gnome-desktop kde-desktop lxde-desktop xfce-desktop"
will install them all.

You select them during the graphical login. If you use GDM (which is
probably what you're using unless you installed from the KDE spin), you'll
have to enter your user name before it will let you pick your desktop.
