This appears to be true on Fedora 8-x86_64 and Fedora 9-i386 and
probably other versions but that's all I've tested so far.

Anyone else seen that? Workaround?

Umm, it's a bug in AdobeReader... report to Adobe?

In the meantime you can remedy it by
logging in as root

changing directories to
/usr/share/applications/

and then making a symlink
ln -s /opt/Adobe/Reader8/Resource/Support/AdobeReader.desktop AdobeReader.desktop
