The desktop environment (DE) consists of a lot more than just the window
manager. In fact the wm is unlikely to be the "heaviest" thing around
nowadays.

You can install other desktop environments without removing Gnome, e.g.:

yum groupinstall "KDE (K Desktop Environment)"

or

yum groupinstall XFCE

In fact you probably don't want to remove Gnome as a lot of extra stuff
comes with it, much of which you can also use from a different DE.
