man yum.conf

       installonlypkgs
              List  of  packages  that  should  only  ever be installed, never
              updated. Kernels in particular fall into this category. Defaults
              to kernel, kernel-smp, kernel-bigmem, kernel-enterprise, kernel-
              debug, kernel-unsupported.

It's a parameter that goes in the yum.conf file.  Look in /etc/yum.conf
at how other options are done, and use it in a similar fashion.
