I did try that and it didn't make any difference.  Doing a Google
search for local-host-names revealed why, if the system is defined in
/etc/hosts it shouldn't need to be in local-host-names as well.

I'm sceptical about that; a part of your problem is that, when mail arrives, sendmail doesn't know what to do with it.

Have a close look at other files in /etc/mail that you have changed (and then those you haven't).
