Depending on what you really want to do with this, you can use the
netpbm package, and reduce the image to b/w in a controlled way. If you
want to keep gray levels overall, you need another tool.
I use those tools when scanning newspaper articles, to reduce the image
to black and white for minimal storage requirements.
