I suggest dump it, use Evolution or if you use KDE, Kmail.
The option you are looking for in Thunderbird is located first by
composing a new message. Then enable the "formating toolbar" located in
view >> toolbars >> formating toolbar.

Sorry my version has view >> toolbar but then no formating toolbar. It
has Mail toolbar, status bar and then cusimize. I found no emotions
anywhere. I begin to think this version is broke.
