I set one up ages ago.  The only useful hint that springs to mind right
now is to also run a DNS server.  Jabber servers tend to expect quite a
few different sub-domains to be set up to suit themselves, and every
Jabber client has to be able to resolve those names.  Messing with hosts
files on a plethora of boxes is a headache best avoided.
