What is the output of hostname?  That's what should get appended when
you do things like "echo testing | mail -s test someone@xxxxxxxxxxx"

The mail command will drop the mail to the MTA running on the host and
that may need to be configured to append the domain or hostname.  I
use postfix on my systems and appending the hostname is the default,
though it's quite simple to change that to append just the domain.
