reality check: recording a meeting

I want to record a 2-hour meeting. I think I need a laptop with FC5, audacity, and a wireless microphone. The idea is to use Audacity to record the discussion, interrupting every 20 minutes or so to save the file, and start a new one. The microphone is passed from speaker to speaker. Is this realistic? Has someone done this before? What microphone is recommended?
