Configuring and operating any SMTP server is not for the faint of heart... That said, Postfix is infinitely easier to work with than sendmail, which requires true guts and serious geek credentials. Don't know about exim and others, but Postfix's design is highly modular and it works well. It's a robust, enterprise-quality system that will do anything you need with regards to email handling. Just be prepared to spend a lot of time reading the mostly excellent documentation on the Postfix website. Again: maintaining an email server (of any flavor) requires a serious commitment of time and effort.
