More details are needed:

- how many disks? (and how many gigabytes?)
- how many volumes, partitions?
- what level of RAID?
- can you have all the old and new disks connected at the same time?
- do you want to do everything with zero down time? (you need
hotpluggable hardware, in this case)

There are many ways to do what you want.
