It looks like evolution-data-server is providing a new libecal and a
new new libedata-cal, but other components are dependent on the
existing version of these libraries.

How do I resolve this conflict?

You exclude evolution-data-server* from yum updates and wait for updated versions of the dependent packages to be released.
