If you installed kernel updates properly (*), you'll have more than one
on the system.  All you have to do is boot up using a prior kernel.  You
can do this manually via the GRUB menu, or you can configure the
grub.conf file to do so by default.

* Kernels should "installed" not "updated".  Installing them leaves the
prior one as-is.  Updating installs the newer replacing the older.
