Boot with the rescue CD (or the install CD in rescue mode) so you have
the LVM drivers and tools available.

After it mounts the filesystems (or fails) you can run e2fsck on the
(unmounted) logical volume.
IOW, make sure /dev/VolGroup00/LogVol00 is not mounted, then run
"e2fsck /dev/VolGroup00/LogVol00"
