There are a couple of ways. I edit /etc/inittab to boot to run level 3, 
since I prefer to boot to text mode. That is a bit of a pain if you just 
want to run text once, however. 

Should you want to boot either graphic or text on a regular basis, edit 
the grub.conf file. Otherwise, edit the grub command line by adding a "3" 
to the boot command. Unfortunately, I don't use either of these last two 
approaches, so I cann't give you exact incantations.
