Xorg CVS would hit rawhide soon. At that point you can use http://cvs.fedora.redhat.com to get the spec files


I had a look at that, and it was interesting, but... there are a lot of patches in there and it builds everything, including docs, libraries, and applications.
I was hoping to build an unmodified server tree with no patches.

P.S. Related newbie question... Is there an easy way to extract
  an individual file from a binary RPM?


look at rpm2cpio
