The menu is hidden by default but that can be disabled. If you display the menu, then you can select whatever other os you have set to boot. If you look in /boot/grub/grub.conf and comment out the line that says "hiddenmenu" then the menu will display every time, not just when you press a key at the proper time. The length of time the menu is displayed/available is set by the timeout line in the same location.
