Yeah - Ghost works... We've done it a couple of times this way without 
success. 

The other alternative would be to use vmware-mount to mount the vmware 
partitions (http://www.vmware.com/pdf/VMwareDiskMount.pdf) and then copy the 
filesystems with cp onto your new drive... rerun grub and if should work...
