The setup you mentioned, Postfix w/mysql virtual mailboxes, Postfixadmin and Courier-Imap seems to be the most highly recommended way to go. I use it myself with Squirrelmail for my email customers. I did have to build my rpm's for postfix with libraries for mysql.
