Hello.

To answer question 1, at some point you are going to need to be
connected to the internet in order to download headers and packages
using yum. However, you can create a local repository for yourself
and configure yum to simply install packages from the hard drive.
Again though, you have to get your packages from somewhere online
before that can even happen.

question 2. "rpm -qa" will list packages you have installed on your
machine.

question 3. Just recently I saw mention of yumex in the list. Have
gander at that
