/etc/passwd:

adalloz:x:500:500:Alexander Dalloz:/home/adalloz:/bin/bash

becomes by using "vipw" or "chsh":

adalloz:x:500:500:Alexander
Dalloz:/home/adalloz:/usr/libexec/openssh/sftp-server

(Not my recommendation, but what you ask as an explanation for.)
