Setting Default Mimetype Icons in Nautilus....

Anyone out there to give me a clue as to how to set (re-set) the icons in gnome-vfs and/or Nautilus?
I am not interested in setting them via the GUI - but rather setting up systemwide global defaults.....
I see how to build the XML file that is used to update the database, but I cannot figure out how it relates/determines which Icon to use with the mime type.... Currently, the default Gnome theme is not resolving correctly.... The Mimetype association is correct, but the icon is wrong....

Mimetype resolves to application/msword and opens with OpenOffice

Icon resolves to application/x-executable

I cant find any good howto on how to rewrite this, can someone lend a clue.

TIA
