Boot with the SMP version.  Then run this from a shell:

  cat /proc/cpuinfo

If you see more than one "processor" line, then you can take
advantage of SMP; and should probably use it.  However if
there's just one (numbered "0"), then you probably don't need
SMP and should just use the non-SMP kernel as it might be
slightly faster/smaller since it's stripped down a bit.
