On the drive you do not want to mount as /boot and / you 
will need to label them as something different using a 
rescue CD or the rescue mode on this install CD.

Alternatively you can change the /etc/fstab to use 
the device instead of the label.

Example;
Change :
LABEL=/ ...
LABEL=/boot ...
To {your system may be different} :
/dev/hda5 ...
/dev/hda1 ...

You can find out the device assigned to your partitions 
with "df" or "mount".
