I had this same problem.  Almost made OO unusable.  The solution
(provided by the list here) was to comment out all languages except the
ones you use in /usr/lib/ooo-1.1/share/dict/ooo/dictionary.lst.  

Apparently having to generate spelling lists using all languages uses
tremendous amounts of resources (memory) and I suspect the system starts
swapping which brings it to a crawl.
