I assume by "reset", you mean "deleted"?
You'll need to restart syslog:
# service syslog restart
Did not know that, I'll have to remember to restart syslog after deleting log files. Now that I see the error the server is complaining about, I gave the /var/spool/mail directory the proper write premission and I'm back in business! =)
Alternatively, you should be able to clear out log files without restarting syslog via:
cat /dev/null > file.log
The above should work on any file that a running process such as syslog has open.
