Try 
    "xterm -cm".
Or 
    "man ls | colcrt | less "

There may be 100 other ways to use or not use color.

For example this also works and can be added to 
your login dot file.
 
 export MANPAGER=" colcrt | less"

or
 export MANPAGER=" col -b | less"
