As far as I can see, this contains the iptables actually in use.

I know what rules are currently in action -
"iptables -L" tells me.
My question was - what iptables would I have
if I chose one of the other options?

As far as I can see, there are not actually alternative iptables -
choice of one of the other options presumably just affects
which applications are allowed to work?
