The problem's entered into the bugzilla database, and lots of people are having it, so I think it'll get fixed.
I think it'll be a respun gtk2 update, rather than messing with the gnome-utils package, though.
It seems fixed now with gtk2 2.4.7-2.5
FWIW, I was able to work around this by doing:
yum remove desktop-printing yum update
however, doing yum install desktop-printing after still gives the (bogus) dependency on /usr/bin/gtk-query-immodules-2.0
