Are you using one of the smp kernels? 

To see if you are using a smp kernel check your rpm database:

rpm -qa kernel*

if you are you should see a kernel something like this:

kernel-smp-2.4.22-1.2179.nptl

I use top to monitor my system here at the office. I have four
processors in it.
