You should be able to get to a text mode console with Crtl-Alt-F1, for 
example.  Ctrl-Alt-F7 will normally get you back into X.

Do Ctrl-Alt-F1, login and do telinit 3 as root.  This will move you to 
runlevel 3, where X is not running, and X will be stopped.  Then you can do 
the nVidia deed.

If you want it to stay that way for future boots, edit /etc/inittab and change 
the line 

id:5:initdefault:

to 

id:3:initdefault:

If you then want to start X from text mode, it will be a job for telinit 5
