That did it! Thanks... now, is there supposed to be a shortcut somewhere for gstreamer-properties? How would the average person know to use that?

Yup. Under Gnome, it's in

Preferences -> More Preferences -> Multimedia Systems Selector

The question is... will the average person even understand the options? =)
