Do you mean the resolution of the VNC display?  You need to start
vncserver with '-geometry 800x600' (for instance).

If you're using the /etc/sysconfig/vncservers file instead of starting
the vncserver program yourself there is no way to do this in Fedora
Core 1 -- but it is possible in Fedora Core 2.
