Can anyone confirm if SATA and ISCSI are supported under Fedore Core or RH

SATA - yes.. (depending on controller)

iSCSI - no..

If so, what are the realistic transfer rates, ie. data transfer from one
raid to another,
preferably with caching, that you can get out from them?

It will be as fast as your slowest component (NIC, HDD and CPU [probably in that order])..

On ISCSI, any pointers on ISCSI commands to send data remotely?

Search on sf.net for iSCSI, there are a few projects starting up..

AFAIK, you have to be running SCSI disks in the target server to use iSCSI..
