Umm.. if it left all the "crap" in there there wouldn't be much sense in 
using rpm (or any package management) in the first place. Sure there will 
be *some* amount of manual cleaning necessary because of saved 
configuration files causing directories not getting removed and such but 
that depends on what changes you have done to the system etc - no single 
answer there.

As for ~/.gnome etc stuff in your home directory: manual cleaning 
necessary, no package manager will touch your personal settings.
