Kudzu is a service (?) that scans for new hardware. When you install something new or remove hardware from your machine you should run Kudzu to get it configured.
But I cannot figure out for what is it there in /etc/fstab.

It's there so that kudzu knows which entries it created, and therefore which entries it is allowed to remove. Basically, kudzu won't mess with any entries that don't have the kudzu option set (but it may mess with any that do as it sees fit!)
