I use Evolution all the time, I think is great.

By default the editor is set to write the e-mail in a plain text format
(which I think is the most used, and of course more secure). If you want
to have all the sizes, colors, etc, you will have to go to the tools
menu|configuration|editor preferences and check de default format to
HTML.

If this is not clear, drop me a mail and I'll send you a screen-shot
from where you can find the option (my system is in Spanish).
