You (anyone) can get alternate colors or monochrome here:
  http://www.xenotime.net/linux/patches/menuconfig-altcolor-mono.patch

The yellow highlight character shows up poorly for me.  OTOH, I doubt that
any one color scheme would be good for everyone.
