Not dumb -- good question!

As it turned out, running 'fdisk -l' indicated that, in addition to sdc1 (my
real /boot), sda1, sdb1, sdd1, and sde1 were also marked bootable. So I
toggled this off on each of those resp. devices in fdisk (a,w,q),
reinstalled grub for good measure (grub-install /dev/sdc1) and rebooted.
Grub again started up as normal.
