yum install pungi or revisor, point them to the repository you create (and that contains the customized kernel), and run the tools.

FWIW, the customized kernel's NEVRA (name, epoch, version, release, architecture) will need to be higher then the one from the kernel available from upstream.

FWIW^2, could you log a bug against the kernel and attach the patch you applied (if you haven't already)?
