The suggestions so far have assumed you won't get asked for a root password to go to single user. There's a way around that too.

Append "init=/bin/sh" to the end of the kernel line and boot.

mount -o ro,remount /
mount -a
passwd root
<new passwd>
sync
wait a few seconds
reboot
