1. is there a shortcut to enable/disable full headers?
At least in "Classic view"[1] after you set Headers All[2], there is a little +- box in the upper left corner of the message that you can use to minimize the header to just a subject line.

2. the headers go beyond my screen resolution, how can I see them all/scroll?

A) gripe at Thunderbird folks for a bad UI design (IIRC Mozilla displayed the whole message body area so you could scroll).
B) press the +- box in the upper left corner and press CTRL+U.

[1] View -> Layout -> Classic view
[2] View -> Headers -> All
