In the graphical screen it is called "Create custom layout",
and it is hidden in the drop-down list that defaults to
"Erase all ... ".

At that point you can also go to the text shell using <Ctrl><Alt><F2>,
invoke fdisk and have your way with the partitioninng, then
return to graphical using <Ctrl><Alt><F7>, then click the Back
button, then click the Forward button [to be sure that no stale
state gets carried forward], again select Custom layout, and
proceed with no changes (or more changes.)
