The other post (`touch`) gives the correct answer, but note that there is no
"created" date on Unix -- just last modification, last access, and last
metadata change.

Thanks, I did not realize this. I was specifically working with jpgs,
which do have this metadata as an optional part of the file. Thanks
for informing me.
