no mail1 is replacing mail.
modifying the dns is a bit of a task, both servers are internal behind
a firewall.

Maybe, maybe not - it depends ;)

Seriously, you didn't give much detailed information and I am guessing
that you are new to mail server and DNS setups. Are you?

Will the 2 mail hosts run in parallel for a specific time? Are you able
to modify the DNS zone yourself?
You have to keep in mind that on client side DNS information is cached
and thus you will have to count for it when migrating to a new host if
the IP changes.
