I don't know anything evolution specific, but if it were me I'd run a
packet sniffer on your box and capture the pop3 traffic that evo
generates.  Wireshark (formerly ethereal) is more than capable of
doing this and of showing you a very nice human readable transcript of
the session.

You could also use telnet to connect to the pop server and see what's
there.  Pop3 is a pretty basic protocol, so a little googling would
get you the info you need to do this I think[1].
