I think yum itself should resolve the dependencies.

It would if it could.  After the latest updates:

$ rpm -q --provides parted
libparted-1.7.so.1
parted = 1.7.1-15.fc5


Any advice welcome.

gparted needs to be rebuilt against the latest parted. File a bug if there isn't one already.
